Garlic Mash Cauliflower

In the winter, cauliflower is in season.  With more of us wanting to eat gluten free and grain free to loose weight, cauliflower is the answer.  It is high in fiber and helps in the three areas of body systems that are closely connected with cancer development as well as cancer prevention. These three systems are (1) the body’s detox system, (2) its antioxidant system, and (3) its inflammatory/anti-inflammatory system. Chronic imbalances in any of these three systems can increase risk of cancer, and when imbalances in all three systems occur simultaneously, the risk of cancer increases significantly.

1 large Head of cauliflower (use the florets only)
32 oz. Vegetable broth (Gluten Free)
2 tablespoon Whipped cream cheese
1 tablespoon Minced garlic (1 stalk of the Elephant Garlic chopped – the white portion only)
To taste Salt and pepper

 

  1. Wash and trim the cauliflower to use only the florets;
  2. In a large pot, heat up the broth (chicken or vegetable) until boil;
  3. Place the florets in the boiling broth and cook until tender (about 20 minutes);
  4. Drain the florets and save the broth for another day;
  5. In a food processor, combine the florets with garlic and pulse until smooth like mash potatoes;
  6. Add the cream cheese and pulse some more to blend the mixture
  7. Add salt and pepper to desire taste;
